In May 2010 I graduated from Central Michigan University with a Bachelor of Science in Dietetics.  Soon after, I moved to Virginia with my boyfriend Jacob.  There I became a  Certified Dietary Manager and Dietetic Technician, Registered.  Now I’ve returned to Michigan, to pursue my dream of becoming a Registered Dietitian; I’ll spend the next several months completing a dietetic internship through my alma mater.

As a high school summer job I sold fresh and local produce for Husted’s Farm Market in Kalamazoo, Michigan.  I don’t think I realized it at the time, but I was developing a great interest in food, cooking, and nutrition. During college, I worked as a baker at a local cafe and later as a dietary aide in a long-term care facility.  After moving to Virginia, I spent 5 months working as a health care cook and 11 months as a dietetic technician.

Cooking and eating for optimum nutrition has become such an important part of my life.  My culinary skills have grown tremendously since I considered frozen chicken nuggets and boxed macaroni & cheese a healthy home cooked meal;  however, I am certainly still learning.

 As I make my way through this adventure I’ll be blogging  on several topics.  Posts will fall into the following categories:

Food for Eating – Formerly known as “Lately I’m Loving” posts, here I share foods or products I enjoy.

Dietetic Internship – Updates on the dietetic internship: what I’m learning about/doing everyday, and why I think it’s pretty awesome. Useful for anyone considering this career choice, or anyone curious about what an RD does.

Nutrition – Simple, useful, realistic nutrition advice and healthy eating knowledge.

Running – Now and again, I may discuss my favorite physical activity/stress relief.  I’ve completed one half-marathon, and would like to race another.

I do my best to consume a variety of real foods, limit processed foods, practice moderation, and try new vegetables often.

Michigan summer strawberries, bananas year round…
Heirloom farmers market tomatoes, carrots (baby of course)…
Oatmeal, brown rice too…
Almonds, walnuts and peanut butter…
Basil, cilantro, lemon thyme…
Fried eggs, Salmon, and grilled chicken…
Sharp cheddar cheese, fresh mozzarella, can’t forget the feta.
