Spring Fling: A Collection of Recipes

This morning’s Midland Farmer’s Market trip was a success – despite the rainy weather.

I brought home Michigan asparagus, spinach, radishes, and rhubarb. I’ve spent the afternoon trying to decide what to do with my spring goodies. Sometimes I think I spend so much time looking at recipes that I don’t have time to cook them! Do you ever do this? I’m putting together a list of some spring recipes. Here are some of my favorites, what are yours?

I finish my food service rotation at MidMichigan Hospital this coming week. My biggest project was putting together a theme meal for the cafe. My theme: Spring Fling! I’m serving two main dishes: Tilapia with Mango Salsa and Asparagus and Mushroom Risotto; Plus two sides: Roasted purple potatoes, and roasted asparagus. For dessert: Angel food cake with strawberry-rhubarb compote. Thanks to Husted’s Market, for helping me serve local produce.

Blueberry Breakfast Oatmeal

The new MyPlate logo emphasizes fruit as part of a healthy meal. I agree. Do you eat 2 servings of fruit daily?

Including it with breakfast is an easy way to get a serving in. No big surprise here, my favorite way to eat fruit in the a.m. is with my oats. This morning it was all about the blueberries. Today I added some almond butter for protein and some granola for a sweet crunch.  I cooked the oatmeal with a little cinnamon and served Chai tea on the side. This is a breakfast that will hold me over until lunch.

I have to admit, although oatmeal is a long-time favorite, lately my bowl-of-oat inspiration comes from Kath Eats Real Food.  I urge you to browse through Kath’s ‘Tribute to Oatmeal‘. It’s pretty amazing. And it kinda makes me want to eat oatmeal all day long.

Grocery Store Finds

Moving back to Michigan meant saying goodbye to some pretty amazing grocery stores, and hello again to my midwest stand by. But just because I can’t grind my own peanut butter here doesn’t mean I have no options. Here are some of my old and new favorites:

Frozen Veggies
Where can’t you buy these? Green beans are my favorite.
Quick dinner idea: whole-wheat spaghetti noodles, topped with tomato sauce, with a side of green beans.

Food Should Taste Good®: Multigrain Tortilla Chips
A serving size is about 10 chips, and they are yummy, so no eating straight from the bag! They are low in sodium (80mg/serving) and have a lovely nutty flavor.

Quick lunch idea: Place 10 chips on a microwave safe plate, top with a huge handful of spinach, a few halved cherry tomatoes, low sodium deli meat or beans, and a sprinkle of mozzarella cheese. Add an orange on the side for dessert.

Mini Babybel® Cheese
These are a new product for me. Bonus points – they were buy-one get-one free this week! So far I’ve tried the White Cheddar and it’s delicious. Try it paired with an apple for a filling mid-afternoon snack.

Old Fashioned Oatmeal
Thank goodness you can buy oatmeal just about anywhere, because it’s a staple around here! Coming Soon: a long overdue, “tribute to oatmeal” post.

Lately I’m Loving: Snack Dinners, Pomegranate and Oranges

Whew! What a weekend! With the move and internship coming up in January, I have to pack my weekends with activity.  I can’t even begin to list everything I did this weekend, so I’m not.  I’m just going to sit here and enjoy my dinner.
